Hyderabadi Mutton Biryani Recipe- Step by Step Instructions

Biryani is on the top list of famous foods in india. People think that cooking biryani that also a Hyderabadi Biryani is a very difficult task. Trust me guys it's very easy to prepare.
In this blog post, I will share the authentic Hyderabadi Mutton Biryani Recipe. I will give you step by step process to make this delicious dish. This recipe is easy to prepare and very tasty. So let's dive into the recipe.
Ingredients for Hyderabadi Mutton Biryani Recipe:
- Oil - 1 cup
- Basmati Rice - 1/2 kg
- Ghee - 2 Table Spoon
- Coriander Leaves - 1/2 cup finely chopped
- Raisins / Kishmish - 1/4 cup
- Mint Leaves - 1/2 cup finely chopped
- Onion - 4 large sliced thinly
- A pinch of Saffron
- Milk - 2 Table Spoon
- Yellow Food Colour few drops
- Rose Extract
- Kewra Extract
For marination of Mutton:
- Mutton - 1/2 kg
- Raw Papaya Paste - 2 1/2 tbsp
- Lemon Juice - 2 tbsp
- Red Chilli Powder - 1/2 tbsp
- Fried Onions - 1 cups
- Ginger Garlic Paste - 2 tbsp
- Mint Leaves - 1/2 cup chopped
- Yoghurt - 1/2 cup
- Coriander Leaves - 1/2 cup chopped
- Green Chillies - 2 to 3 chopped finely
- Turmeric Powder - 1/4 tbsp
- Fried Onion Oil - ½ cup
- Shahi Garam Masala Powder - 2 to 3 tbsp
- Salt to taste
Step By Step Instruction of Hyderabadi Mutton Biryani Recipe:
1. Fry Onion:
- First of all, heat some oil in a pan
- Once the oil is ready, add the chopped onions in it
- Fry the onions and keep it aside for later use
2. Fry 1/4 cup of raisins in ghee
3. Marination of mutton:
- First, wash the meat with water
- Take it in a bowl
- Add ginger garlic paste
- Add Raw papaya paste
- Add lemon juice
- Add red chilli powder
- Add fried onions
- Add mint and coriander leaves
- Add green chillies
- Add turmeric powder
- Add yoghurt
- Add shahi garam masala
- Add salt
- Mix all the spices together with the mutton pieces
- Marinate at least for 1 hour
4. Soaking the rice:
- Wash the rice first
- Soak the basmati rice in water for 30 minutes
5. Now we will cook rice:
- Boil water in a pot
- Now add salt according to taste
- Then add the soaked rice
- Cook the rice till it's half cooked
- We will cook the rice later with the meat
6. It's time to prepare the mutton:
- Take a frying pan put all the mutton pieces and the marination mixture as well
- Cook the mutton it for 5-6 minutes
7. Sum it up:
- Now put a layer of half cooked rice on top of the mutton pieces
- Next put a layer of fried onions, mint and coriander leaves
- Put another layer of remaining rice on top of this
- Then top it up with coriander, mint and fried onions
- Close the lid
- Seal the lead with dough
- Now add food colour, saffron
- Also, add rose and kewra extract
- cook it on a very low flame for at least 45 minutes
- After 45 minutes open the lid
- check the rice and mutton if they are cooked properly or not
